KETO Baked Salmon with Roasted Vegetables
Ingredients:
- 4 salmon fillets
- 1 large sweet potato, diced
- 1 small zucchini, sliced
- 1 small yellow zucchini, sliced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon sweet paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Fresh cilantro for garnish (optional)
Instructions:
- Preheat your oven to 200°C (392°F).
- In a bowl, mix together the diced sweet potato, zucchinis, bell peppers, olive oil, minced garlic, salt, pepper, sweet paprika, oregano, and thyme. Stir well to evenly coat the vegetables with the spices.
- Line a large baking sheet with parchment paper and spread the seasoned vegetables evenly on the sheet.
- Roast the vegetables in the oven for about 20-25 minutes, until they are soft and slightly golden.
- Meanwhile, prepare the salmon fillets by seasoning them with salt and pepper on both sides.
- After the vegetables have roasted for the allotted time, remove the baking sheet from the oven and carefully move the vegetables aside to make room for the salmon fillets.
- Place the salmon fillets on the baking sheet among the vegetables.
- Place the baking sheet back in the oven and bake for an additional 10-12 minutes, until the salmon is tender and flaky.
- Remove the dish from the oven and garnish with fresh cilantro (optional).
- Serve the hot dish of baked salmon with roasted vegetables as a delicious and healthy keto meal!
