KETO Baked Salmon with Roasted Vegetables




Ingredients:

  • 4 salmon fillets
  • 1 large sweet potato, diced
  • 1 small zucchini, sliced
  • 1 small yellow zucchini, sliced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon sweet paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Fresh cilantro for garnish (optional)

Instructions:


  1. Preheat your oven to 200°C (392°F).
  2. In a bowl, mix together the diced sweet potato, zucchinis, bell peppers, olive oil, minced garlic, salt, pepper, sweet paprika, oregano, and thyme. Stir well to evenly coat the vegetables with the spices.
  3. Line a large baking sheet with parchment paper and spread the seasoned vegetables evenly on the sheet.
  4. Roast the vegetables in the oven for about 20-25 minutes, until they are soft and slightly golden.
  5. Meanwhile, prepare the salmon fillets by seasoning them with salt and pepper on both sides.
  6. After the vegetables have roasted for the allotted time, remove the baking sheet from the oven and carefully move the vegetables aside to make room for the salmon fillets.
  7. Place the salmon fillets on the baking sheet among the vegetables.
  8. Place the baking sheet back in the oven and bake for an additional 10-12 minutes, until the salmon is tender and flaky.
  9. Remove the dish from the oven and garnish with fresh cilantro (optional).
  10. Serve the hot dish of baked salmon with roasted vegetables as a delicious and healthy keto meal!
