Avocado Shrimp Salad with Lemon Dressing

Ingredients:

  • 2 ripe avocados, halved and pitted
  • 250g cooked shrimp, peeled and deveined
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup chopped fresh cilantro
  • 1 small red onion, finely diced
  • Juice of 1 lemon
  • 2 tablespoons extra-virgin olive oil
  • Salt and pepper to taste

Instructions:

  1. Scoop out a small portion of the avocado flesh from each avocado half, creating a small well for the salad.
  2. In a large mixing bowl, combine the cooked shrimp, cherry tomatoes, cilantro, and red onion.
  3. In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the lemon dressing.
  4. Pour the lemon dressing over the shrimp mixture and gently toss to coat.
  5. Spoon the shrimp mixture into the avocado halves, filling the wells created earlier.
  6. Garnish with additional cilantro, if desired.
