Creamy Spinach and Mushroom Stuffed Chicken Breast!

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 4 cups of fresh spinach
  • 1 cup of sliced mushrooms
  • 1/2 cup of cream cheese, softened
  • 1/4 cup of grated Parmesan cheese
  • 1/4 cup of chopped fresh parsley
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

  • Instructions:

    1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
    2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds.
    3. Add sliced mushrooms to the skillet and cook until they release their moisture and start to brown.
    4. Add fresh spinach to the skillet and cook until wilted. Remove from heat.
    5. In a mixing bowl, combine cream cheese, Parmesan cheese, chopped parsley, salt, and pepper.
    6. Stir in the cooked mushrooms and spinach mixture until well combined.
    7. Carefully cut a pocket into each chicken breast, being careful not to cut all the way through.
    8. Stuff each chicken breast with the creamy spinach and mushroom mixture.
    9. Place the stuffed chicken breasts onto the prepared baking sheet and bake for 25-30 minutes until the chicken is cooked through and the filling is hot and bubbly.
    10. Remove from the oven and let the chicken rest for a few minutes before serving.
